Beet It, Kid...

Beets aren't just for Grandma's borscht, anymore. One beet root has only 35 calories and is high in folic acid, potassium, calcium and betacyanin (the compound that gives beets their deep color), which is known for its anti-cancer properties. Even better, the greens contain significantly more iron, vitamin A, potassium and calcium than the roots. So behold, a dinner to beet all dinners. (Yes, I'm through with the puns!)
